Chicken Katsu Curry

What ya need!


2 chicken breasts

Black pepper

1 egg

2 tbs plain flour

1 cup panko breadcrumbs

Olive/macadamia oil spray

1knob of butter

1 onion, peeled and diced

1 potato, peeled and diced

1 carrot, peeled and sliced

2 garlic cloves, peeled and crushed

92g Japanese curry mix

Rice to serve


What ya do!


  • Place chicken breast between to two sheets of baking paper.

  • Bash with a mallet till flattened.

  • Sprinkle chicken with pepper.

  • Place egg in a small bowl and whisk.

  • In a separate bowl, place flour.

  • In a separate bowl, place panko breadcrumbs.

  • In order, coat the chicken in the egg first and coat all over, followed by flour, then breadcrumbs.

  • Place crumbed chicken in an air fryer and spray with preferred oil.

  • Cook for 20 minutes on 200° or until cooked through.

  • Place butter in a deep pan with onion, potato, carrot, garlic and fry on medium heat for 5 minutes.

  • Add 3 cups of water, cover and simmer for 25 minutes.

  • Add Japanese curry mix and stir occasionally for 5 minutes until mixed well and smooth.

  • Serve rice in a bowl, add curry sauce and top with sliced crumbed chicken.

Hhhiiiyyyaaa!!!


Chicken katsu curry for dinner which was the most fantastic dish even if I do say so myself. It is the best curry I have had for a while.


My favourite part of this meal preparation was beating the chicken. I just pretended the chicken was Mr Shelley when he annoys me, which he has been doing a lot of that just lately. Oh how I gave it a good pounding.


I tried to perform a trick with throwing the egg in the air and catching it on the knife but it failed. I think I better stop because I have clearly lost this skill and I don't think it is coming back.


The Japanese curry mix is called Golden Curry and it comes in a bar just like a bar of chocolate where you can break pieces off. Please don't get confused and eat it like that or it will not be very pleasant for you. This curry mix comes in mild, medium or hot, so please make sure you pick the one that is best for you.


I absolutely love curries and the texture for this is so different and it makes it so amazing by having the rice, then the sauce then the crumbed chicken sat on top in your bowl. It looks good and it tastes good with all the textures and flavours in your mouth at once.
