Loaded Tortellini Soup

What ya need!
1 brown onion, peeled and diced
2 carrots, diced
1 zucchini, diced
2 sticks celery, diced
1 tbsp garlic granules
1 tbsp olive/macadamia oil
6 sausages, chopped (any flavour)
4 slices prosciutto, chopped
250g cherry tomatoes
2 x 400g tins diced tomatoes
4 cups of chicken stock
1 x 400g borlotti beans, rinsed and drained
1 cup green beans
1 x 600g pack tortellini (any flavour)
What ya do!
Chuck ya onion, carrots, celery, garlic and oil in a deep casserole dish, mixing well.
Place on stove top and on a low to medium heat for 5 minutes or till vegetables have softened, stirring occasionally.
Add your sausages, prosciutto, cherry tomatoes and stir.
Heat on stove top on low to medium heat for 5 minutes or till sausages have browned, stirring occasionally.
Add tinned tomatoes, chicken stock and stir.
Place on stove top, bring to the boil, place lid on and simmer for 20 minutes.
Add borlotti beans, green beans, tortellini and stir well.
Place on stove top without lid and cook on a low to medium heat for approximately 5 minutes or till the tortellini is tender.
Serve and enjoy.

Hhhiiiyyyaaa!!! Loaded tortellini soup for dinner and let me tell you this is jam packed full of goodness.
With this soup, you do not have to stick to the veg I used. I basically searched my fridge for any vegetables that I had left and just chucked them in. Luckily it worked. The carrots and celery were a bit limp but perfect for this dish.
I am back to using granules at the moment for my garlic instead of mincing a garlic bulb. I don't have the energy for that, but I have the energy for chopping my vegetables. Bit weird that, but that's how I felt and I can not do anything about it.
I also love the fact that it does not matter what flavour of sausage or tortellini you use because it is your soup, not mine and we all have different tastes. Whatever you choose is going to taste phenomenal.
I was back and forth at the stove top a few times as there was quite a few steps including softening your veg, then browning your sausage, then adding your wet ingredients and then simmering then adding your last items that only take 5 minutes to cook. It sounds a lot but it really wasn't. Have patience.
I get a lot of questions around why do I take the labels off my tinned products. The simple answer is we recycle heavily at home. The paper needs to come off and be separate from the tin can.
You can use any type of stock for this, such as, a carton stock already pre-made, a stock cube or from your own chicken broth.
This loaded soup was absolutely beautiful and it fills your tummy right up and makes you feel very comfy and satisfied.
