Bolognese Bake

What ya need!
1 brown onion, chopped
500g mince beef
2 sticks of celery, finely chopped
2 garlic cloves, minced
1 tbsp dried oregano
375g tub smooth ricotta
2 cups grated mozzarella
1 cup sour cream
350g dried pasta shapes (any)
500g jar of Dolmio pasta sauce (any)
What ya do!
Chuck ya mince in a large frying pan and de-clump.
Add onion, celery, garlic, oregano and mix together.
Fry on low to medium heat on stove top till mince browned and vegetables softened.
In a bowl, mix ricotta, 1 cup of mozzarella and sour cream.
Boil pasta as per packet instructions.
Add Dolmio sauce to the mince mixture and cook on low for 15 minutes, stirring occasionally.
Drain the pasta and pour into a baking dish along with the mince mixture and mix together.
Pour on the cheese and cream mixture and spread to cover the top evenly.
Sprinkle a cup of mozzarella all over.
Place in a preheated oven on 200° till the topping has turned golden brown
Serve.

Bolognese bake is so yummy. So carb filled and I am here for it. If I was not putting on weight, I would eat carbs every day. I do, so I can't. It is winter at the moment and it is cold so this dish is perfect to warm the cockles of my heart.
I had a treat today because Mr Shelley made dinner because I injured my foot and was wearing a moonboot. I just sat there observing and shouting out instructions. His first mistake was leaving the backing of the mince meat on. We have all done it but he put the mince masher into the mince and I at least realise well before that. What a muppet. I got my mince masher from Kmart and it is the cheapest most helpful kitchen utensil I have ever purchased. It breaks my mince up so well with no lumps. I call it a de-clumper.
I had a little look in my fridge and found some celery that was not far off fungating so they just went in. You can chuck anything in your pasta bake that is lurking in your fridge looking past it's best.
My foot was hurting today so I wanted extra comfort and rather than sprinkling just cheese on top, I think the ricotta mixed with sour cream and mozzarella really helped. It hit the spot. So tasty.
I also do not go out buying any pasta if I have got random packets with a small amount left. I had penne pasta and macaroni elbows already in my pantry. I just got Mr Shelley to cook them and mix it together. Who cares? Pasta is pasta.
With the pasta sauce, it is your meal so if you want a regular plain pasta bolognese sauce go ahead and get that but if you have a jar of pasta sauce that says extra mushrooms, extra basil or extra spicy, use that. Use what you have and if you don't, buy your favourite flavour sauce. It will work. Don't be doing what another person tells you. Let the recipes be an inspiration and do your own thing. I feel passionate about that. My recipes are just a dinner inspiration and I would not be offended at all if you twisted it to something else that you would prefer better.
I promise you this meal really did taste delicious. It will not let you down. I am sure you will really enjoy it. I feel that confident about it. You can serve it with garlic bread or a salad. It depends what mood you are in.
