Broccoli Scrambled Eggs
Broccoli Scrambled Eggs

What ya want!


1 or 2 slices of any bread per person

1 pkt frozen broccoli 500g

3 tbsp crispy chilli oil

6 eggs

1/3 cup of cooking cream

Knob of butter

1 avocado

Pepper to season

Grated Parmesan to serve

Everything bagel spice to serve

Pepper for seasoning


What ya do!


  • Preheat oven to 200° fan forced.

  • Chuck ya broccoli and chilli oil in a baking dish and stir.

  • Chuck in the oven for 15 minutes or till roasted, then stir at the end.

  • Whisk eggs, cream and pepper together in a bowl.

  • Chuck ya butter, egg mixture and cooked broccoli into a frying pan and cook on stove top on medium heat, stirring continuously till eggs scrambled.

  • Toast bread in a toaster or airfryer to your liking.

  • Spread avocado on toast.

  • Chuck broccoli scrambled egg mixture on the toast.

  • Top with parmesan cheese and everything bagel seasoning.

Hhhiiiyyyaaa!!!


Broccoli scrambled eggs for dinner. What a strange but nice concoction. I don't want no meat for dinner tonight. I just don't fancy it. Mr Shelley and the boys looked at their plates and said "where's the meat?" Oh stop it will ya. One day won't harm. Honestly.


The crispy chilli oil mixed with broccoli adds flavour to the dinner and I promise you will not be saddened by it. You could make your own chilli oil if your really wanted, but today I don't want to thank you very much. You should know by now Mrs Shelley doesn't do anything she doesn't want to.


I tried a trick with the eggs but it failed. Instead of cracking them into the bowl like you normally would, I threw them up in the air and tried to get it to land on the knife. I am usually good at this trick but I think I've lost that skill well and truly. I dropped one of them on the worktop and scooped it in the bowl. What? It was a clean worktop. Don't be making me out to be a mucky pup.


I added cream to the eggs to give a bit of consistency even though I've got a muffin top/spare tyre. I did get the light version though.


My choosing of bread is rye bread, but honestly you can choose your own bread because let's face it everyone has their favourite. There is no rule to the bread situation. You do you and don't listen to nobody else. I chucked mine in the airfryer. I prefer the crispiness to the bread rather than the toaster.


Whilst it was all cooking, I grabbed a nice glass of wine. I felt a rebel cooking a meal with no meat so I thought I might go one step further and have a wine. It tasted wonderful.
