Chicken and Veg Traybake

What ya need!


2 carrots, cut into sticks

1/2 cauliflower cut into small florets, rinsed and drained

1 broccoli, cut into small florets, rinsed and drained

1 red onion, peeled and chopped

1 bunch silverbeet, stem removed and leaves chopped

1 tin cannellini beans, rinsed and drained

2 tbsp olive/macadamia oil

2 tbsp balsamic vinegar

1 tbsp garlic granules

1 tbsp dried oregano

2 chicken breasts, chopped into 2 cm cubes


What ya do!


  • Chuck ya carrots, cauliflower florets, broccoli, onion, beans, oil, vinegar, garlic and oregano in a baking dish.

  • Mix thoroughly.

  • Add chicken and mix.

  • Place in preheated fan forced oven on 200° for 60 minutes or till veg tender, mixing halfway through.

  • 5 minutes before the end of cooking, chuck ya silverbeet in a heatproof bowl and pour boiling water from the kettle over the top of it ensuring to cover it all.

  • Place a plate on the top and leave for 2 minutes.

  • Drain and add to the cooked chicken and veg and stir through.

  • Serve.

Hhhiiiyyyaaa!!!


Chicken and veg traybake for dinner. A meal with no heavy carbs. No potatoes, no rice, no pasta, no bread. I do these things once in a while. Honestly this cleared our innards out. Just what we needed. I know it is too much information, but a very important factor I need to share. It is a beautiful meal full of fibre and protein. Enjoyable. Look, feel free to add your carbs to it and add gravy too. Who am I to say what you have to do? It would be just as tasty that way too. You could even add some Mexican spice to it too. It is such a versatile dinner.


This dish is a great idea if you have any veg left over that is looking a bit sad and limp. My carrots were limp and I'm not bothered. They roasted perfectly. I don't waste food. It's also great that you basically just chuck everything in a baking dish and that is it. How easy is that? Life needs to be easy these days.


Never forget that I am sometimes lazy and do not buy garlic bulbs or fresh herbs. I buy garlic powder, or granules and dried herbs. It doesn't matter but I don't like wastage and therefore I do buy dried products. You can of course be really good and buy fresh.
