What ya need!


2 chicken breasts sliced in half, crossways

1/2 cup plain flour

1 tbs garlic powder

2 eggs, lightly whisked

Olive/Macadamia oil spray

1 onion, diced

1 knob of butter

400g jar of passata

1 tbs dried oregano

8 slices of ham

200g shredded mozzarella

Serve with mash potatoes and green beans


What ya do!


  • Place flour and garlic on a plate and mix.

  • Place whisked eggs in a shallow bowl.

  • Place panko breadcrumbs on a plate.

  • Place chicken in the flour and turn over so that both sides of chicken are dusted with flour.

  • Place the chicken in the egg mixture, ensuring both sides are covered.

  • Place the chicken into the panko breadcrumbs making sure that both sides of the chicken are coated.

  • Place the chicken on a line baking tray.

  • Spray the chicken with oil.

  • Place in a preheated oven at 200° fan forced for 40 minutes or till crumbs are golden.

  • Place butter and onion in a frying pan and fry on medium heat on stove top for five minutes or till onion soft.

  • Add the passata and oregano to the onion and heat through for 3 minutes on medium heat.

  • Place the sauce mixture over the chicken.

  • Add two slices of ham on top of each chicken.

  • Pour over mozzarella cheese.

  • Place back in the oven for 10 minutes or till cheese is golden.

  • Serve with mash and beans.


Mrs Shelley's Unique Information!


Hhhiiiyyyaaa!!! A pub classic is a chicken parmi and Mrs Shelley has decided to make it at home. Whenever I go out for a parmi, it is absolutely massive and I cannot finish it off. I buy chicken breasts and slice them in half across so that I have a thinner chicken breast and then I can eat it all. I love a parmi.


When you are coating the chicken in the crumbs, you can add any herbs or spice that you think would go in to the crumb mixture. For this one, I left it plain. You can even whizz up some bread if you have it left over instead of using panko breadcrumbs.


With the passata I bought Mutti but , you can purchase your favourite passata. We all know what we like. What is the point in me telling you to buy a certain brand. We are all individual and that is the way I like it.


I absolutely preferred my parmi over going out because my chicken was fresh and a lot of the time I find it is dry along with a dry crumb. I have stopped eating it out now because I have never had one where I have thought that is nice and fresh.
