What ya need!


1 kg potatoes, washed and cut into wedges.

Olive/macadamia oil spray

1 tbs olive/macadamia oil

1 tbs everything bagel seasoning

1 tbs dried oregano

200g cherry tomatoes, quartered

2 spring onions, sliced

1/2 lime, juiced

8 rashers smoked bacon, chopped

1 avocado, diced

100g fetta

Sour cream to serve


What ya do!


  • Place wedges on a baking tray.

  • Spray with oil and season with everything bagel seasoning and oregano.

  • Mix well and place in preheated oven 200° for 45 minutes to an hour turning halfway through.

  • Place tomato, spring onion in a bowl along with lime juice and mix well.

  • 5 minutes before wedges are ready, place oil in a frying pan and preheat on medium heat on stove for one minute.

  • Add bacon and cook on low to medium heat till browned and crispy.

  • Serve wedges into a bowl, top with bacon bits, tomato mix, avocado, fetta and sour cream.

  • Enjoy.

Hhhiiiyyyaaa!!! Loaded wedges for dinner and I am here for it. An awesome carb loaded dinner. If this is what I want and feel like, then this is what I am having. Will you stop it. If any of my family say where is the meat then they can put up with a bit of bacon and that is that and they can stop their moaning.


You can buy frozen wedges or chips and they taste good but sometimes you want to make your own wedges and that is the vibe I had, but I might not have that vibe next time. You never know with Mrs Shelley.


Adding herbs and spices on to the wedges is a great flavour tool, even if you are loading them up after. It gives it a more authentic, rustic flavour.


The cooking time can be a bit sporadic because it depends how thick you cut your wedges. It should usually take 45 minutes but mine took about an hour or longer. I went thick cut. Stop it. You will know when they are ready, just stick a fork in it and if it goes in easy it's ready. If you have a bit of resistance then it is not. Even if the wedges are browned on the outside, it is still worth checking.


Topping the wedges with bacon, tomato, spring onion, avocado, fetta and sour cream was worth it totally. It really made it more flavoursome. I would do it again. There are so many ways you can make loaded wedges.
