Creamy Chicken and Bacon Pasta
Creamy Chicken and Bacon Pasta

What ya need!


500g chicken thigh fillets, chopped in to small pieces

6 rashers of streaky bacon, chopped in to small pieces

2 garlic cloves, crushed

200g mushrooms, sliced

2 tbs paprika

2 tbs olive/macadamia oil

300g penne pasta

300ml thickened cream

1 cup grated parmesan

60g baby spinach


What ya do!


  • Place chicken, bacon, garlic, mushrooms, paprika and oil into a large frying pan.

  • Mix together.

  • Fry on stove top on a low to medium heat for 10 to 15 minutes, or till chicken cooked, stirring occasionally.

  • Cook pasta as per packet instructions.

  • Add thickened cream and parmesan to the chicken.

  • Return to stove and cook on the same temperature for 5 minutes till cream thickened.

  • Add baby spinach and cook for 1 minute.

  • Drain pasta and add the chicken mixture to the pasta.

  • Stir and serve.

Oh my goodness, a lovely creamy chicken and bacon dish. What an absolute treat. A real hearty meal. Yes it is full of carbs but I am not caring about this at this moment.


I don't know about you but cutting up a chicken thigh is my least favourite job. I like to cut all the bits of fat off. Ugh. I don't like to but I have to.


Using scissors to cut my meat is an absolute game changer. I can never go back to a knife now. It's all that Curtis Stones fault.


Don't be surprised that I am using a real garlic bulb. None of this dried granules stuff today. I have a few spare from my Hello Fresh meals so I might as well use them up.


I have a little secret and that is two of my children don't like mushrooms. Is it mean that I put them in? I can't help it. Sometimes I like a good old shroom. I'm not doing all that separating rubbish. Eat it or don't in my house.


With this dish, the smoked paprika is what really makes the flavours. It smells and tastes absoloutely gorgeous. Mr Shelley said it was so tasty.


I like to use a good cooking oil and I tend to go for an Olive or Macadamia oil but I know how expensive oils are so you use what you want to use.


Do not be going out and buying penne pasta if you have other pasta. It tastes the same just a different shape. Save your money and go on your hollibobs.


My face was pleasantly happy when I added the cream and parmesan to the dish. I am not thinking about calories but wow. It sure looks good.


Don't come at me. I trusted Coles this week. I did not wash my spinach. It says washed and ready to eat but I usually give it another wash through. I did search for moths though.


I really hope you enjoy this dish as much as what I and my family did. Even though two of them don't like mushrooms.
