Falafel Bowl

What ya need!
200g pkt grated carrots
2 garlic cloves, crushed
1 tbsp of your preferred cooking oil
1 bunch broccolini
2 x 225g pkt of falafels
200g of any small tomatoes, halved
Family pkt of brown rice and red quinoa
Sweet chilli sauce to drizzle
What ya do!
Tip ya carrots in a frying pan.
Add garlic and oil.
Fry for 2-3 minutes on the stove on a medium heat.
Heat a pan of water on stove and bring to boil.
Cut the bottom of the stems off the broccolini and place in water once boiled.
Boil the broccolini for five minutes on medium heat and drain.
Place falafels in the airfryer at 200 degrees for 5 minutes.
Cook rice as per pkt instructions.
Place rice and carrot mix in your bowl or plate, along with broccolini.
Add tomatoes and falafels.
Drizzle with sweet chilli sauce.

Hhhiiiyyyaaa!!!
Ooooh Mrs Shelley has gone all healthy and is having a falafel bowl for dinner. Oooooh get me. What on earth has come over me? Don't worry I'm sure it won't last long.
Lazy me aint grating no carrots today. I bought it pre-packed. What about it?
I want to tell you that the worst job in the world for me is peeling the skin off my garlic cloves. I thought I would be good and not use garlic granules and I bought a garlic bulb. I got it home and immediately regretted it. I peeled it and put it in my little garlic crusher and it crushes it but then you have to scrape it off and then open the contraption and scrape the rest out. Oh it's a faff. I might not do that again.
I even bought fresh broccolini! No frozen veg today so I will let myself off with the carrot bag if you don't mind.
They are alright them falafels aren't they? Quite tasty. I do like my meat but I realise there is other foods out there to eat. In fact, meat free dishes can be cheaper in today's economy.
You know what? I really enjoyed this meal. It was different and filling. I would definitely have it again. Try it.
