What ya need!


1 butterflied boneless chicken with mango and sweet chilli

1 x 350g Asian Style Salad kit

2 cups frozen diced mango, defrosted

1 tsp dried chilli flakes

1 microwaveable pkt coconut, chilli and lemongrass rice


What ya do!


  • Cook the chicken as per packet instructions.

  • Prepare Asian Style Salad kit in a bowl as per packet instructions.

  • Place defrosted mango and chilli flakes in a blender till pureed.

  • Heat microwaveable rice as per packet instructions.

  • Slice the cooked chicken.

  • Serve the rice and salad on a plate, top with sliced chicken and drizzle mango and chilli puree over the top.

Oh my goodness how easy is this Mango and Sweet Chilli Chicken with Rice dish? Oh will you stop it. I can't cope.


I got the chicken from Woolworths in a bag in the refrigerated section. It is marinated in mango and sweet chilli which are two of my favourite ingredients. I'm not going to lie, when I got it out of the bag I was not sure. Butterflied chicken has no bones so that is why it looked a little weird. In between the chicken breast and thigh you could see clear skin ugh. Then I remembered my kids love chicken skin.


The best thing about this dish is you just shove the chicken in the oven, cook your microwaveable rice, prepare the salad which is already prepared and puree your mango and basically it is done. It is that quick.


While my chicken was cooking, I got started on the salad. I basically chucked it in a bowl and totally forgot that there was a sauce in a bag and dry noodles. Good job I noticed or someone would have been eating a small bag.


I just chucked everything on the plate and hoped for the best and everyone loved this. I loved it the most because it was so easy. No faffing around at all. Really good for tired people.
