Meatloaf

What ya need!
500g pork mince
3 slices of white bread, made into fine breadcrumbs
1 brown onion, chopped finely
3 garlic cloves, chopped finely
1 apple, chopped finely
1 tbsp mixed herbs
1 egg
1/4 cup char sui sauce
1 zucchini made into spirals
2 carrots made into spirals
1 tbs Macadamia/olive oil
1 tbs garlic powder
What ya do!
Chuck ya mince into a bowl with breadcrumbs, onion, garlic, apple, mixed herbs and egg and mix well.
Press mixture down into a lined loaf tin.
Top with Char sui sauce, spreading evenly.
Place in preheated oven at 200° fan forced for 45 minutes.
Place carrots, zucchini, oil and garlic powder in a frying pan 5 minutes before meatloaf is ready and fry on medium heat on stove top for 5 minutes.
Slice meatloaf into portions.
Place vegetables in your bowl and top with Meatloaf.

Meatloaf for dinner. Will you stop it. This reminds me of school dinners. Although, I don't remember it being topped with Char sui sauce. Having said that I wouldn't have known what Char sui sauce is back then.
I don't buy breadcrumbs if I can help it. I just chucked my regular bread in a whizzer and that will do. What are we paying for breadcrumbs for? Will you stop it.
The worst thing about meatloaf is that it really is best to mix with your hands to get everything mixed together perfectly but it really does feel cold and squelchy in your hands. It is my least favourite job.
My favourite contraption to finely chop my veggies is by far the Kmart vegetable chopper. You just chuck the veg in and pull a string a few time and it's done. Unremarkable. I even put an apple in. I went rogue. An apple in a meatloaf? Well, I did it. It was beautiful.
The key to the perfectly shaped and sliced meatloaf is pressing it down hard in the loaf tin until it is compact and equal. It gives you the perfect slice.
The char sui sauce on top is so glazy and sticky that it cooks onto the meatloaf itself offering a real authentic flavour. You don't need any gravy with the meatloaf as that will not go well with the sticky sauce on top.
I love spiral veg. I was shopping once and I saw a product that makes spirals out of your veg. I was hooked, bought it and have used it ever since. I have been told to use a vegetable peeler but how long am I going to be peeling that for? Nope! I'll be using this till I'm 6 feet under. I still am amazed by it. I am in awe every time I use it.
