Pappardelle Bolognese

What ya need!


500g minced beef

1 onion, peeled and chopped

1 carrot, halved lengthways and sliced

2 garlic cloves, crushed

1 tbsp dried oregano

1 tbsp dried basil

1 tbsp dried mixed herbs

1 x 400g pasta sauce (any kind)

1 beef oxo cube, crumbled

350g pappardelle pasta

Grated cheese to serve


What ya do!


  • Chuck ya mince in a frying pan and declump.

  • Add onion, carrot, garlic and dried herbs cooking on a low to medium heat on the stove top for 5 to 10 minutes or till mince browned and veg has softened, stirring occasionally.

  • Cook Pappardelle as per packet instructions.

  • Add pasta sauce and oxo cube to mince dish and stir.

  • Simmer on stove top for 10 minutes.

  • Drain pasta and add to bolognese mixture.

  • Stir.

  • Serve and top with cheese.

Hhhiiiyyyaaa!!!! Pappardelle Bolognese is another hit with my family. We absolutely loved it. A carbilicious overload. Yummy.


Mrs Shelley always bangs on about pasta. It is my favourite, but I do try and portion control. It is always hard when it comes to pasta though.


With this dish no extra oil is needed as the fats from the mince act as your oil.


I stole little Miss Shelley's HexClad frying pan. She got it gifted and they are supposed to be the best pans ever and they really are. When she moves out I will have to invest in some. Maybe she will forget they are there. She won't though. She never forgets a thing.


Can I admit that I could actually bend my carrot nearly in half? Look, it had not gone off though. It was still edible. Don't throw your sad veggies away as they add bulk to the meal. You can throw it away if it is visibly moldy but this was just pure floppy. Still worked. It softens when cooked anyway.


I'm still loving my mince de-clumper. I will never use anything else now. One of the most useful and cheapest kitchen utensils I have ever used. I love it.


As you can see in the picture my bolognese is not as wet as a bolognese usually is and that is because I went with 400g of pasta sauce rather than a bigger one. I was just in the mood for a drier meal rather than being overrun with wetness. I really wanted to choose better words here but this is the best I can do. My mind is not being in the gutter. I promise. It was still moist though. Eeeek there you go again Mrs Shelley. I went with a posh pasta sauce today as I felt like it. The taste was beautiful but honestly with this recipe you can make your own sauce, buy a different brand and you can buy a different size of pasta sauce. It's your dinner, not mine.


Honestly, I have mentioned before but I have only just found out recently to crumble the oxo in the silver wrapper. Stop it. I used to undo it and then crumble it getting it all on my hands and it was very messy.


This dish was beautiful. I loved it and my family loved it. Plenty left over. Wonderful. I hope you enjoy it too.
