Pork Balls and Salad

What ya need!
1 tbs of your desired cooking oil
2 spring onions, sliced
500g Pork Mince
Salt and pepper for seasoning
1 tbs dried coriander
1 egg
350g bag Asian Style salad
100g danish feta, chopped
Sweet chilli sauce for drizzling
What ya do!
Chuck your spring onion, mince, coriander, egg, salt and pepper in a bowl.
Mix together with your hands.
Roll into balls.
Heat oil in a frying pan for a minute on the stove top on a medium heat.
Add ya balls to the pan and fry till browned, turning till the whole of the ball is browned. Use a medium heat for approximately 5-10 minutes.
Prepare salad in a bowl.
Serve the salad first and add your balls on top.
Tip with feta and drizzle with sweet chilli sauce.

Hhhiiiyyyaaa, pork balls and salad for dinner. Yum yum yum.
Remember when ya slice your spring onion, you only need the white part slicing. The absolute best part of all. So tasty.
Ooooh I run out of my dried coriander because silly me did not check. I had about half a teaspoon. Whoopsie. Yes I could have bought fresh but I don't. Why? I never use it all and then it's a waste of money. I really must do better next time.
I never whisk my egg first. I chuck it in and then I get my hands in. Ugh it does not feel nice to put your hands in to a meat and egg mixture. It is so cold, wet and squelchy. Ugh. It is someone's job and it was mine. Oh well. I took it for the team. I used an ice cream scoop to scoop my meatballs out. Why not. I am absolutely doing it. I really did. It comes out the perfect size of ball you need. Oh will you stop it, I am a genius.
With the salad kits, sometimes I forget there is packets of sauce in the salad bag. I just chucked it in my bowl and saw two packets plop into the bowl. Good job I saw them or someone would have had that on their plate. Lucky I only cooked for my family.
As lovely as it was and the flavour was popping, I still liked something on top of my balls. Get your mind out of the gutter. Mine is clearly in it. So I chucked feta and sweet chilli on it. You don't have to but I liked it.
