Roast Pumpkin with Noodles
Roast Pumpkin with Noodles

What ya need!


1/4 (800g) any pumpkin, chopped in to 2cm squares

2 tbsp olive/macadamia Oil

1 tbsp sesame oil

4 tbsp soy sauce

1 tbsp sesame eeds

200g any mushrooms, halved

1 carrot, grated

340g Pkt egg noodles

1 cup frozen peas


What ya do!


  • Add 1 tbsp of oil to a baking tray and brush till fully covered.

  • Chuck the pumpkin into a bowl and add sesame oil and 2 tbs soy sauce.

  • Mix together and throw on to your baking tray, spreading evenly.

  • Sprinkle sesame seeds on top.

  • Place pumpkin in a preheated fan forced oven for 200° for 45 minutes or till tender.

  • Ten minutes before the pumpkin is ready, add 1 tbs oil to a fry pan and heat on medium heat for 1 minute on the stove top.

  • Chuck ya mushrooms and carrot in the frying pan and cook on medium heat for a few minutes till mushrooms brown.

  • Cook egg noodles as per packet instructions and add frozen peas in at the same time.

  • Drain noodles and peas and add 2 tbsp of soy sauce and mix through.

  • Serve noodles into your individual bowls and top with mushrooms and pumpkin.

Roast pumpkin with noodles for dinner. What will Mr Shelley say? I know exactly what he will say. Where is the meat? Did he say it? Of course he did. I've been married to him for 25 years. I know him very well. I am not eating meat everyday. I'm not doing it and if he doesn't like it, he can lump it. Oh he complains so much. When I meal plan, I know it straight away.


You can use any pumpkin for this recipe but my personal favourite is a Kent pumpkin. The kids hate pumpkin so I know they will be dipping into the emergency bag of nuggets and who cares? It's my life too and I have to eat what I enjoy at times.


Adding soy sauce to the pumpkin just provides this noodle dish with so much more flavour and the best way to mix it in the bowl is by using your hands. It gets all the pumpkin covered.


I personally am not a noodle lover but when I do fancy a noodle dish, I go with egg noodles. I am partial to an egg noodle. Any other noodles, you can keep them. It's funny how everyone is different.


You can add any veg into this noodle dish but I wanted to use my frozen peas that have been in my freezer for a while. The tip is to just chuck it in with your noodles because noodles and frozen peas only take a few minutes to boil. Why waste your time doing it separately?


I really enjoyed this meal. It tasted so good. The rest of the family might have played up but that is because they don't like noodles, pumpkin or they want meat. It's tough isn't it? I was able to put the rest in the fridge in containers for meal prep.
