Sausage Minestrone Soup

What ya need!
1 tbsp olive/macadamia oil
8 sausages, any flavour
1 brown onion, chopped
2 carrots, diced
2 celery sticks, diced
3 garlic cloves, chopped
2 tbs tomato pesto
1 tbs dried mixed herbs
1 tin diced tomatoes
1 tin cannellini beans, rinsed and drained
1 litre chicken stock
Salt and pepper for seasoning
1 cup any small pasta
60g baby spinach
Parmesan to serve
What ya do!
Chuck ya oil in a large deep pan and heat for 1 minute on the stove top on high.
Squeeze the meat out of the sausage skin, chuck in the pan and break in to small pieces.
Add the onion, carrots, celery and garlic to the pan and stir
Cook on stove top on low to medium heat for 5 minutes or till veg softened.
Add pesto, mixed herbs, tomatoes, cannellini beans, stock, pasta, salt and pepper.
Simmer for 30 minutes, covered.
Remove lid and add baby spinach till wilted.
Serve into individual serving bowls.
Top with parmesan

I love a good sausage minestrone soup in winter. It is packed with veg and pasta and can also it into a pasta dish. In fact we did do that the next days with the leftovers. Yummy. Two meals in one. Stop it right now.
I use a crockpot to cook this in but as long as it is a deep pan, it doesn't matter what pan you use.
My worst job is taking the sausage meat out of the sausage skin. It feels horrible, cold and slimy. It is worth continuing with it, because if you get a great flavour of sausage, it tastes great. You could actually buy sausage meat and add your own flavours, or come to think of it, you could just cut your sausages into small pieces with the skin on. It will not matter in the slightest.
I still have plenty of garlic bulbs left at the moment but you use garlic powder of granules as an alternative. It tastes just as good.
I ran out of salt in the grinder and I am that lazy, I did not put it in. There was a packet in the pantry and it is easy to refill but I was focused on getting dinner ready. Gosh, I am really lazy. I left it for Mr Shelley to do.
With pasta, use what you have. Do not go and buy any little macaroni elbows specially. I had a little bit of penne pasta left so I chucked that in and still called it a minestrone soup. Who cares? It's only your family eating it.
By the way, I am getting even lazier and placing my trust in washed packaged spinach again. A lot of people say wash it, even if they say it has been washed and I thought "oh I better" and I did and now I don't. I can't be bothered. Sorry.
The parmesan at the end really makes it. This was honestly so delicious. I hope you enjoy it.
