Vegetable Enchiladas

What ya need!
2 large sweet potatoes, peeled and diced
1 zucchini, diced
1 red capsicum, diced
1 brown onion, peeled and diced
Pepper for seasoning
Olive/Macadamia oil spray
25g Mexican spice mix
1 tin kidney beans, drained and rinsed
300g jar salsa
100g cheddar cheese
10 small tortillas
1 avocado, diced for serving
Sour cream for serving
What ya do!
Chuck ya potatoes, zucchini, capsicum, onion, spice mix and pepper in a deep baking tray and stir.
Spray with oil of your choice and mix through.
Place in a preheated oven 200° for 60 minutes, stirring halfway through.
Add kidney beans and half of the salsa and stir into cooked vegetable mixture.
Place mixture into the centre of the tortillas and roll the tortilla, placing the sealed side down in a deep baking tray and repeat for all the tortillas.
Scatter the rest of the vegetable mixture over the top of the tortillas.
Spread the rest of the salsa over the vegetables and top with cheese.
Place back into the oven until the cheese has melted.
Serve with avocado and sour cream.

Vegetable enchiladas for dinner and very nice indeed thank you very much.
Sometimes Mrs Shelley cannot stomach a meal with meat. The men in the family would love meat daily but on occasion I need to have a rest. When I serve them a meal with no meat, they all look at each other and then one dares to say "where's the meat"? I simply say, if you don't like it, cook a meal yourself.
With this dish I love the fact that it is all done in a baking dish with not much else happening. No cooking on the stove, just shove it in the oven and it's done. End of!
I don't know what is the matter with my kids at times. They ask me what is in it. I tell them sweet potato. One will say don't like that. Then I move on to zucchini. Wouldn't you know it, I don't like that. Well, go get your nuggets out of the freezer and cook them yourself. I'm not doing no alternative. I don't know why they don't just eat what I give them.
The Mexican spice mix really adds flavour to the vegetables. It is a great choice of spice. You can also switch a few things out such as black beans for kidney beans and a more spicy salsa for regular salsa. Do what you want, it's your dinner. This is simply a dinner idea for you if you don't know what you want to make.
The tip with the tortillas is just put a small amount of veg mixture in the tortillas so that that they roll up well. You are looking at approximately 2 tablespoons. See how you get on.
I really enjoyed this meal. It tasted great. Such a great idea and a way to get a variety of vegetables down you and a better choice of potato. What more could you want. The avocado and the sour cream on the top made it extra yummilicious.
